Latest opening: Sachi sushi restaurant at Pantechnicon
Japanese/Nordic retail and dining space Pantechnicon has launched its signature sushi restaurant with former Dinings Harcourt and Roka chef Collin Hudston leading the kitchen.

What: ​A huge, high-end sushi restaurant that's located in the bowels of Pantechnicon's historic, five-storey building in the heart of London's Belgravia, and takes its cue from regional Japanese cooking.

Who: ​Sachi is led by former Dinings Harcourt and Roka chef Collin Hudston, who has created the menu in partnership with Pantechnicon’s executive chef Chris Golding (previously of Nobu and Zuma). The duo are joined by general manager Lorenzo Cannavina, a fluent Japanese speaker who spent many years living in the country.

The food: ​Working with Cannavina, Hudston and Golding have dived into Japan's diverse regional cuisine to create a range of contemporary dishes inspired by the local delicacies of Hokkaido, Osaka and Fukuoka. However, in keeping with Pantechnicon's wider culinary offering, Nordic flavours and ingredients have also been interspersed throughout the menu. The robust sushi section features a range of sashimi, nigiri and maki available to order individually in portions of between two and six pieces, or as part of a larger chef's selection plate. Prices are befitting of more high-reaching sushi restaurants, but still feel accessible, particularly given the swanky London postcode. Individual portions start at £6 and go up to £12, depending on the cut and type of fish; while the selection plates range between £17 and £32. A five-piece, vegan nigiri plate is also available (£12). Down the menu, a concise range of larger, hot and cold sharing dishes also features, split between fish, meat and vegetable options. They include thinly-sliced seabass topped with lava salt and sea buckthorn (£12); trout fillet with whey miso and buckwheat (£15); beef short ribs with black garlic and fermented mushroom (£18); and tomatoes with sea lettuce and smoked senbaisu (£7).

The drink: ​Sachi features a drinks list of Japanese whiskies from Pantechnicon’s bottle shop, Sakaya; alongside a sake list overseen by Natsuki Kikuya, one of the UK’s few Sake Samurais. A list of cocktails crafted with spirits and flavours of Japan also features.

The vibe: ​Set in the barrel-vaulted lower-ground floor of Pantechnicon, Sachi's interiors show off the fabric of the building and feature furniture created by Karimoku Case Study, a collaboration between Japanese furniture maker Karimoku and Copenhagen-based Norm Architects. Utilising the shape of the space, across Sachi’s 130 covers guests can choose from central tables, hidden noren covered booths, a private dining room, and an eight-seat sushi counter. The walls are adorned with original art works by Tokyo-based artist Ryo Matsuoka, which were also specially commissioned for the restaurant. They include a striking six-metre-long piece of vibrant abstract expressionism. Matsuoka also hand painted the restaurant’s logo – the Japanese typographic symbol for Sachi (which translates as 'happiness' in Japanese).

And another thing: ​Sachi is the final space to launch within Pantechnicon, which originally opened last year and is billed as 'a cultural space centred around food, drink, design and shopping experiences all inspired and intertwined by both Nordic and Japanese cultures'. Divided into eight individual spaces, it also encompasses the Roof Garden; Nordic restaurant Eldr; Japanese patisserie Café Kitsuné; hole-in-the-wall takeout spot the Kiosk; bottleshop Sakaya; and retail areas the Edit and the Studio.
