Mark Sargeant to reopen his Brasserie MS restaurant
Mark Sargeant has confirmed the return of his Folkestone restaurant previously known as Brasserie MS.

The former Gordon Ramsay lieutenant closed the site after just six months’ trading earlier this year following a difference of opinion with his backers over its future. 

Sargeant has been looking for staff on Instagram for the past few months and is now understood to have secured the funds necessary to relaunch. 

The restaurant is expected to open next month following a 'few tweaks' including a 'small' name change. 

Writing on Instagram, the chef said: “Today after 5 months of back and forth I am ecstatic to say that I finally got the keys back to my restaurant in Folkestone. I can’t wait to get back in there and have lots of things planned. I would like to say a massive thank you to all the messages of good will I’ve received over the past months and the massive support l’ve had from people around me.” 

Brasserie MS saw the former Rocksalt and Gordon Ramsay at Claridge’s chef ‘go back to his roots’ with a menu of classical French cuisine featured reimagined classics alongside ‘more contemporary ideas’.

Dishes included pressed duck liver and wood pigeon terrine with Madeira jelly and truffle dressing; tart of braised beef, pomme puree, onion confit, sauce verte and sherry caramel; a take on duck a l’orange; and a pig’s trotter dish inspired by Pierre Koffmann.

The space has an Art Deco feel, echoing some of the great restaurants of the late 90s, with Sargeant saying that he wanted to bring back ‘casual elegance’ after spending the past 15 years offering a more casual dining experience.

In 2021 the Kent-born chef walked away from his flagship and the rest of his Folkestone-centric Rocksalt Group citing “unresolvable differences of opinion” between him and business partner Josh De Haan.
