Mark Sargeant to return to Folkestone with The Brasserie MS
The project will see the Gordon Ramsay-trained chef ‘go back to his roots’ with a menu of classical French cuisine that will feature redimagined classics alongside ‘more contemporary ideas’.
The Brasserie MS will have an Art Deco feel, echoing some of the great restaurants of the late 90s.
Sargeant says his vision is to bring back ‘casual elegance’ after spending the last 15 years offering a more casual dining experience.
Located in the town centre, the restaurant will have a kitchen table for up to six guests that will offer an 8-10 course tasting menu.
Late last year the Kent-born chef walked away from his flagship and the rest of his Rocksalt Group citing “unresolvable differences of opinion” between him and business partner Josh De Haan.
The group’s portfolio comprises four sites in Folkestone including Sargeant’s former flagship Rocksalt and four countryside pubs.
