MasterChef winner to co-run Brighton i360 viewing tower brasserie
Steven Edwards, who won MasterChef: The Professionals in 2013, plans to offer a number of his signature dishes using ingredients from the South Downs and coastal waters, when the brasserie opens next year.
The i360 is a 162-metre observation tower being constructed on the seafront of Brighton, near to the West Pier. It will offer views of the city and Sussex countryside.
Edwards will be joined on the project by business partner Josh Stanzl – who together also run events catering company etch.
Edwards said: “Josh and I are really looking forward to working with this amazing new venue. We are Sussex chefs through and through, and have a fantastic larder to choose from.
“We will always use quality local ingredients to create unique simple dishes focusing on getting the most out of each ingredient we use.”
Event rooms
In addition to the brasserie, Centerplate will also cater for i360 event rooms. The rooms will be suitable for weddings, corporate events and private dining events for 10 to 800 people, and each will come with their own private beach terrace.
Nigel Hutson, director of heritage operations at Centerplate, said: “The Brighton i360 is going to be a world-renowned visitor attraction, and we are very pleased to be part of this exciting venture.
“We want to encourage members of the local community and families on a day out to pop in for refreshments throughout the day, while appealing to discerning diners in the evenings."
Hutson added: “Bringing Steven and Josh into the mix will create some further excitement around the signature dishes on our brasserie and event menus, which will be regularly refreshed.”

Prior to taking over as chef director at etch in 2014, Edwards was head chef at the Two AA Rosette Camellia at South Lodge, near Lower Beeding, in West Sussex.
