MasterChef winner reveals details of first Hove restaurant

MasterChef: The Professionals winner Steven Edwards has revealed more details about his upcoming Hove fine dining restaurant Etch.

The 36-cover site will serve a choice of two weekly-changing tasting menus that are designed to showcase Sussex produce. 

It will open for dinner Wednesday-Friday, and for lunch and dinner on Saturdays from 24 March. 

There will also be a private dining room seating eight. 

Edwards, whose CV includes Belmond Le Manoir aux Quat’Saisons in Oxfordshire and the South Lodge Hotel in West Sussex, won the sixth series of MasterChef: The Professionals in 2013 at the age of 26. 

He left South Lodge in 2014 to launch catering business Etch Food, and says that has been searching for a site for his own restaurant ever since.

He was also involved with creating the menus at the 400-cover brasserie beneath the city’s recently opened i360 observation tower. 

“In Brighton and Hove, I have found the perfect location – the local produce available here is outstanding, I’ve loved getting to know the suppliers and it is their quality ingredients that are going to be inspiring my tasting menus week after week,” he says. 

Etch is one of a number of new restaurants to open in Brighton and Hove this year. 

Former Flank chef Tom Griffiths is to launch his first permanent restaurant in the city, while Edward’s former South Lodge Hotel colleague Matt Gillan has launched a crowdfunding campaign to open a cafe/restaurant later this year.
