De Vere to open fish restaurant at revamped The Grand, Brighton
GB1 as it will be known, will open its doors next month and will replace the hotel's current restaurant King's Restaurant as part of a multi-million pound refurbishment of the historic Victorian venue.
The Grand's executive chef Alan White is currently devising a menu for the 150-cover restaurant that will run alongside 'catch of the day' options with dishes expected to include fish pie, a fish-finger sandwich and a monkfish tikka. Oysters and Champagne will be available at the restaurant's bar and meat-eating diners will also be catered for by being offered meat dishes from the grill.
Hotel general manager Andrew Mosley said the restaurant's 15 chefs and other hotel staff were excited about the launch of the restaurant, which will also allow diners to choose how their fish is cooked and served.
"We are also very proud to be supporting the local fishing industry," he said. "The Grand is a Brighton landmark and as such we make every effort to support local businesses. It helps that in this case, the local fish is some of the best around."
Hotel refurbishment
The opening of the new restaurant forms part of a £5m refurbishment project at the hotel. All 201 bedrooms, 11 conference rooms and public areas such as the Victoria Lounge Bar & Terrace, will be given a refresh.
GB1's opening will be followed by the opening of the hotel's new well-being spa in April. Plans for the spa include steam rooms, a sauna and 7 treatment rooms with four nail bars.
Mosley said: "We have listened to our customers over the past few years and have responded with these exciting improvements to our existing facilities as well as the addition of more meeting space and the spa. Seamless management of the works will ensure disruption is kept to a minimum."
According to reports, following the refurbishment, De Vere is expected to put The Grand on the market as part of its strategy to offload some hotels from the group in order to fund the development of its Village Hotels brand.
