Leonid Shutov is mixing things up at his Bébé Bob restaurant in Soho with a collaboration with acclaimed bartender Ryan Chetiyawardana and a redesigned a la carte menu.

Mr Lyan’s Cocktail List will capture ‘the bold spirit and sense of fun that defines both brands’ with options including Frites Royale - a twist on Kir Royal - which pays homage to Ryan’s favourite Bébé pairing, French fries with a glass of ice-cold champagne; the Bébé Lyan Martini made with Amalfi lemon and frozen vodka; and the Chicken Bone Negroni, a nod to the Bloodshot cocktail created at Chetiyawardana’s London bar Super Lyan.

The cocktails are designed to complement a new bar menu that is focused on chicken and caviar that features Schnuggets – golden chicken schnitzel nuggets – served with caviar or trout roe; chicken fat doughnut filled with roast chicken curd, dipped in jus and sprinkled with chicken crackling; and lemon and caviar doughnut, filled with lemon curd, dusted with sugar and topped with Oscietra caviar. All snacks can be ordered with or without caviar.

Bébé Bob’s main menu will continue to be centred on roasted Vendée and Landes chicken but Shutov has ‘evolved’ the ‘chicken or chicken’ philosophy to include chicken schnitzel.

“Bébé Bob became a firm favourite after we went down on the invitation of some friends for ‘Champagne, chicken and caviar’ (that’s what our calendar invitation excitedly promised too), and we were so impressed by the uniqueness and confidence of the restaurant,” Chetiyawardana says.

“It’s become a regular haunt for us since, and so we were really excited when Leonid wanted to chat to us about trying to bring a similar boldness to the cocktail offering.”

Shutov added: “We were very excited to see Ryan among our early regulars at Bébé Bob, so when our thoughts turned to bespoke cocktails we could not think of anyone better to approach for collaboration. It has been incredibly exciting working with the world’s leading authority on cocktails and we can’t wait to share the results with customers old and new.”

Shutov launched Bébé Bob on Golden square towards the end of last year as a play for marginally more casual territory following the success of his Bob Bob Ricard restaurant brand, which has sites in Soho and The City.
