Pastan shutters its Brighton restaurant after less than a year

Vegan pasta brand Pastan has closed its Brighton restaurant after less than a year.

While Pastan’s website lists the site as being closed temporarily, a sign outside indicates that it has been successfully let to what is presumably a new tenant. 

The 25-cover restaurant launched at the very beginning of this year​ just off London Road on Baker Street in the site that was once home to Semolina. 

The creation of Jerome Ibanez-Fawcett and chef Dean Fawcett who saw a ‘huge’ gap in the market for vegan pasta,  Pastan launched its first permanent site in Bristol in 2020 following successful pop-ups in both Bristol and London. 

The brand currently operates a further three sites, one in London’s Barbican and two in Spain in  Barcelona and Malaga.

In 2022, it launched a site in Manchester but that restaurant has now closed.

Dishes at Pastan include shiitake Caesar salad; loaded gnocchi with a choice of either tomato, plant-based ‘cheese’ or mushroom; pumpkin and sage tortellini dressed with sage butter; vegan mac ‘n’ cheese; a take on spaghetti alla puttanesca; and the signature Dolce Vita, a vegan interpretation of carbonara made with a coconut-based sauce.

Earlier this year, the brand added a range of vegan pizza to its menus.
