David Stevens swaps The Wolseley Hospitality Group for Jeremy King Restaurants
According to his LinkedIn page, Stevens left The Wolseley Hospitality Group earlier this month to join King’s new group as executive chef of the soon-to-launch Simpsons in The Strand in London’s Covent Garden.
Charles Hilton has taken over Stevens’ role at The Wolseley Hospitality Group having spent the past eight years as head chef at the group’s Brasserie Zedel restaurant in Piccadilly.
The Wolseley Hospitality Group was previously led by King under the Corbin & King moniker. However, the restaurateur was ousted from the group back in 2022 after its major shareholder, Minor International, acquired full control of the business.
King subsequently set up a new venture called Jeremy King Restaurants, which made its debut in the capital earlier this year with the opening of Arlington on the former Le Caprice site in Mayfair.
It also operates modern American brasserie The Park, which recently launched within the new Park Modern building near London’s Kensington Palace Gardens.
Stevens was born in Brisbane, Australia, where he undertook his initial chefs training, which included an apprenticeship at the Brisbane Hilton working with master pastry chef, Walter Peters.
In the 90s he relocated to Europe where he gained experience at Michelin-starred establishments including Fleur de Sel in Haslemere, Surrey; Chateau de Montreuil in France; and Dolder Grand in Zurich.
He joined Caprice Holdings as pastry chef at The Ivy in 1998 before leaving to start his own business, called Proof is in the Pudding, which he operated for eight years.
Stevens joined Corbin & King in 2013 as head pastry chef at The Wolseley, before becoming head chef in 2017. Following Minor’s takeover of the business he was promoted to group executive chef and oversaw the opening of Manzi’s in Soho and The Wolseley City last year.
