Permanent Chet's restaurant to open at Hoxton Shepherd's Bush

The forthcoming The Hoxton hotel in Shepherd's Bush will be home to a permanent site for Thai/American restaurant brand Chet’s when it opens at the end of the year.

Chet’s, a collaboration between the Hoxton and Kris Yenbamroong, the man behind wine and Thai food Night + Market in Los Angeles, is currently operating as a four-month pop-up restaurant at The Hoxton Holborn. Kicking off at the hotel’s wine bar and incubator site Rondo La Cave​ in May, the residency is due to end in September.

Chet, which translates as ‘brother’ in Thai, takes inspiration from the classic American diner comfort food but combined ‘with the fragrant flavours and textures of food from Thailand and the surrounding regions’.

Dishes on the current menu include fried chicken with red eye dip and ranch; crispy rice salad; a chiang rai hotdog featuring chilli topped with fried shallot, onion, pickle and coriander; a smashburger (pictured) made with a pork and beef patty with American cheese, Chet’s secret sauce, chili, pickle and coriander; and pad rigatoni sauteed with prik tum, shrimp, egg, onion, tomato and seasoned
with golden mountain sauce.

It also serves a tight range of wines and cocktails, including a coriander martini and a lemongrass and lime spritz.

Designed by Ennismore Design Studio, The Hoxton Shepherd's Bush will have 237 rooms and is due to open in winter 2022.
