Ceviche’s Martin Morales creates new British Airways menu to be served at 35,000ft
The new airline route, which will operate three times’ a week in summer and twice a week in winter, will serve the menu from May 4 to June 4.
Dishes served on board are set to include ‘causa de camaron’ (mashed yellow potatoes, layered fresh prawns and Amarillo chilli) and ‘bistec escabechado’ (grilled soy and cumin marinated beef fillet with pickled tomato and onion salsa and sweet corn puree).
Customers in ‘Club World’ – effectively first class ‒ will also be offered a traditional pisco sour cocktail that blends pisco brandy with lemon juice and egg whites.
The route will be the only direct route from London Gatwick to Lima, with year-round prices starting at £765, climbing to £2,549 for first class.
Morales said: “Peruvian food is one of the most exciting and cutting edge cuisines in the world as a result of its wide variety of flavours, influences and ingredients so it’s fantastic that British Airways customers will now be able to enjoy this incredibly diverse cuisine whilst in the air. It has been a fascinating challenge to take restaurant cooking into a format that works at 35,000 feet.”

This is not the first airline-related involvement from Morales; in 2013 he ran a Ceviche pop-up at London Heathrow in partnership with the airline Virgin Atlantic.
The news comes soon after Morales announced plans to open a new restaurant, Casita Andina, in London's Soho on 28 July.
