The spiel? "An authentic American diner (so far, one in Soho, one in Shoreditch) with milkshakes, cocktails and beer.

We are here for more than just a burger: it's a whole dining experience," says Co-owner Andreas Akerlund.

Which means? Red leather booths, ‘June Carter' cocktails and swing music. But without the fl ood of memorabilia pinned to every available wall space you can fi nd in some American diners.

Who's behind it? This is the latest restaurant from trio Andreas Akerlund, Marc Francis- Baum and Patric Franzen, who opened their fi rst bar 12 years ago – Two Floors in Soho. They also own the Hoxton Square Bar and Restaurant in Hoxton and The Slaughtered Lamb in Clerkenwell.

Would like to fi nd? The trio want more sites north of Oxford Street.

"We like Camden and think it suits what we do, so we are starting to look there," says Akerlund.

Would suit? "There is a strong media presence in our diners, but they suit anyone. Children and families come at weekends and there is a kid's menu and crayons to keep them happy."

Ideal site? "Somewhere with an outside area because of the smoking ban. Our Shoreditch diner is really small – only 55 covers – and we can easily double that without losing any of the charm."

Future plans? All the central London villages are on the list.

"For now, taking over London is enough for us, we aren't looking to open outside London yet."

Why will this concept work?

"It is value for money, stylish and authentic with a twist. There is a good balance between authenticity and delicious food.

And it's fun," Akerlund explains.
