The Evolv Collection launches new steak house brand

The Evolv Collection is rolling out a new steak house concept, Chop House & Tavern, across three London sites.

Later this month, the group’s New Street Grill in the City will relaunch as Liverpool Street Chop House & Tavern.

The brand will then extend to two other existing restaurants: Butlers Wharf Chop House near London Bridge and Paternoster Chop House, also in the City.

The Evolv Collection’s recently appointed CEO Martin Williams said the new concept “returns to the founding vision” of Sir Terence Conran, who established the group in the early 1990s as Conran Restaurants.

Drawing inspiration from 17th- and 18th-century London, the design aims to capture the “simple, functional beauty” of the era.

Brand historian Ron Cregan, known for his work with Mulberry and The Maybourne Group, has overseen the interiors, which feature dark wood palettes, deep reds and blues, crisp white linen, brass and gold detailing, and mirrors with gold script.

The brand’s tagline ‘Born in the City of London’, references the area’s historic trade guilds.

The kitchen is led by Mike Reid, former culinary director of Gaucho-owner Rare Restaurants, which was previously overseen by Williams.

Reid’s menu will combine heritage dishes with modern touches, including pea soope from a 1669 recipe, lamb Barnsley chop with anchovy dressing, and beef shin and oyster suet pudding. Sharing plates will include pig’s head, roast chicken pie, and ray wing with lemon & caper butter sauce.

The oyster selection will range from traditional preparations to versions with beef consommé and horseradish.

Steaks, sourced exclusively from The Ethical Butcher, will include rib eye, fillet, sirloin, and heart of rump, alongside elevated bar snacks such as Welsh rarebit on toast, smoked haddock scotch egg, and cold roast beef sandwich with horseradish cream.

Drinks will include Guinness served in tankards, an 80-bin wine list with 20 exclusives, and a cocktail menu designed for the City crowd.
