A former PizzaExpress, the Jesus Lane will be the group’s largest restaurant yet with a total of 150 covers.
It will join the group’s existing restaurants in Cheltenham, Battersea, Bristol and Solihull.
The site is undergoing a full redesign and refurbishment by Q&A Interior Design creating a ‘unique and eye-catching Japanese-inspired space’ that incorporates the brand’s trademark murals and digital animations alongside ‘stunning Japanese floral and foliage installations’.
The menu at KIBOU Cambridge will centre on the group’s sushi and sashimi sharing platters, including a 20-piece luxury ‘tokujo moriawase’, alongside signature sushi rolls, hand-pressed nigiri, and a range of other classic and contemporary Japanese dishes including tempura, ramen, donburi, bao buns and gyoza.
The Cheltenham-founded group says it has a further site in the pipeline for 2023 and ‘remains firmly focussed’ on expanding the KIBOU brand over the next five years.
“We’ve long set our hearts on operating here, it’s spot on to our core demographic, so when the right site came along, we knew it was time,” says joint managing director Sam Horswill.
“Recruitment for key positions is going well. We’ve been fortunate to attract some incredible new talent for the restaurant, plus a number of existing team members are joining the team.”
KIBOU was founded in August 2019 by former Regent Inns CEO David Franks following his acquisition of KIBOUSushi in Cheltenham.
