In a statement posted on Instagram earlier this week, Montoya confirmed the closure of Apoy, which he launched within Market Halls Oxford Circus in London in the summer of 2023.
Its last service was held on New Year’s Eve (31 December).
He said: “This isn’t a decision I’ve made lightly, but one that comes with the clarity that my health must come first. The truth is, I need to slow down, breathe, and prioritise myself in a way I’ve neglected for far too long.
“Adjusting my life to live with heart failure has forced me to confront some difficult realities. This industry, this world I love so deeply demands so much. And while I’ve given it everything I’ve got, it’s time to listen to what my body’s been trying to tell me.”
Montoya was hospitalised back in September with hypertension and heart failure.
The chef, whose CV includes stints at Tom Sellers’ Restaurant Story and modern Asian restaurant Foley’s in Fitzrovia, has been a prominent advocate of Filipino cuisine in the capital through both Apoy and his previous restaurant brand Sarap, which started out as a supper club and eventually evolved into a full-service restaurant concept.
“From Sarap to Apoy, I’ve carried the dream of sharing Filipino cuisine with the world,” Montoya continued.
“I can’t say I achieved everything I set out to, but I know I gave it my all. If I managed to crack open even one door for another Filipino chef, or inspire someone to cook our food with pride, then every sacrifice was worth it.
“This journey has been extraordinary, filled with friendships, unforgettable moments, and opportunities I’ll cherish forever.
“This was always about more than just cooking. It was about representing our culture, our identity, and showing the world what Filipino cuisine can truly be. I hope I’ve done that in a way that makes you proud.”
Montoya also added that while he would now take a break from the industry, he does plan to return to the kitchen in due course.
“This isn’t goodbye, it’s just a pause,” he said.
“My passion for this industry, our food, our stories, and our culture hasn’t faded. I’ll be back, in a way that keeps the fire alive without burning myself out.”
