Documents filed by administrator Begbies Traynor with Companies House show that the business, which owned two restaurants at the start of the year, owed HMRC an estimated £458,873 in unpaid VAT and PAYE.
Other debts included £13,164 to Royal Bank of Scotland while trade creditors are owed an estimated £75,000, with three claims totalling £1,923 received by the administrators to date.
Consumer creditors who have paid for restaurant vouchers and gift cards are estimated to be owed around £35,790, according to the filing.
Sunday Brunch star Rimmer and business partner Simon Connolly opened Greens restaurant in Didsbury in Manchester in 1990 and it became a well-known fixture of the city’s dining scene.
The chef made the shock announcement in January that he was closing the restaurant after 33 years of trading saying that he had made the decision after the landlord increased its rent by around 35% and that the rising cost of food, materials, heating, lighting and power and employing people had also played a part and had led to the business becoming ‘unviable’.
This was followed in September by the closure of the group’s other restaurant in Sale, which opened in 2022.
At the time Rimmer said: “We’ve done everything possible to make this work, but it is now clear the business is untenable.”
