Italian kitchen and pasta workshop Officina OO is dipping its toe into the world of pizza with its new restaurant.

Set to open in Covent Garden in February next year, the new restaurant will join the group’s London sites in Fitzrovia and Old Street and will serve a pizza menu for the first time.

Available exclusively at the Covent Garden restaurant, the ‘pizza in rutiello’ menu will honour the homestyle cooking of Napoli nonnas with pizzas made with flour milled in England in partnership with Wildfarmed flour that are ‘light, fluffy and crisp whilst remaining authentic to the region of Naples’, the restaurant says.

The pizzas will be served in a rutiello pan at the table and will be available in small and larger sizes.

They have been designed to complement the restaurant’s signature pasta menu with toppings changing seasonally.

The rest of the food offer will be in line with Officina 00’s existing menus, featuring snacks and small plates including fried raviolo filled with cacio e pepe; and panko lasagna with truffle, aged provolone and aioli and starters such as buffalo burrata; and aubergine parmigiana.

Pasta will remain a focal point on the menu, hand-made in-house on a spianatoia - a traditional wooden workbench that absorbs humidity.

The pasta menu will include occhi with lamb genovese, sour parsley pesto and aged provolone; ink tagliatelle with baby octopus, yellow peppers and taggiasche olives; and pappardelle with beef short rib ragu, meatballs and ricotta.

A cocktail menu will nod to classics with drinks that include an Italian Margarita, Pink Americano and 00 Spritz, complemented by a selection of exclusively Italian wines and British beers on tap.

“Inspired by the kitchens of our mothers and grandmothers’–it’s a taste of our home and childhoods. This feels like the next evolution in our journey, and we can’t to share that with our guests.”
