According to a post on Instagram the former Gary Rhodes lieutenant is heading to Cornwall and “looks forward to finding the next venture”.
The Cygnet is a fine dining restaurant set in a pub that offers a £69 tasting menu that includes the likes of baked daikon, burnt orange ponzu, tuna, miso emulsion; and hay-smoked local venison, black garlic, parsley root and beetroot. A lunch menu and a grazing menu is also available.
Welburn helped Nina Gray and Nicole Patrick launch the Cygnet restaurant in 2022. Prior to that, the chef was at the Oxford Kitchen where he won a Michelin star.
His cooking CV also includes stints with Andrew Pern, Brian Hughson and Richard Corrigan.
Welburn will leave The Swan Inn in February 2025.
