Chef Trystan-Ross Pooley-Tolkien-Williams acquires Cornwall’s The Star Inn

Chef Trystan-Ross Pooley-Tolkien-Williams and his wife Daisy have acquired The Star Inn and Penzance Brewing Company in Crowlas heralding ‘a new era for the local pub and brewery’.

Pooley-Tolkien-Williams has spent the past decade working in top kitchens including Sabor, Angler and Restaurant Sat Bains while Daisy has a background in branding. 

Penzance Brewing Co. continues to operate with the The Star Inn set to reopen in the run up to Christmas with a full kitchen to follow in the new year. 

The simple menu will ‘celebrate locally sourced ingredients’ and ‘pay homage to the pub’s proximity to local farmers and fishermen’. 

Fish Fridays will be built around the catch of the day whilst Sunday Roasts will boast high welfare meats. 

The culinary evolution of the pub will see an extended offering launching next spring, all paired with beers from the brewery.
