Ottolenghi will open in the Mandarin Oriental hotel in Geneva, Switzerland, and is described as 'a vibrant Mediterranean dining experience'.
The restaurant will be inspired by the ethos of the London-based restaurant ROVI, according to the group, and 'will champion a vegetable-centric menu, bold flavours and a focus on fermentation and cooking over fire'.
The opening comes during a period of change at the business with the recent departures of chief executive Emilia Foa and chief operating officer Michael Farquhar. Foa, who had been in the role for two years, was brought into the business following his time at high-end consumer brands including Burberry to move the restaurant group into international markets.
Earlier this year the company launched an exclusive retail range within Waitrose, including aromatic spice mixes, pasta sauce and a shawarma marinade, marking its first venture onto supermarket shelves.
The supermarket later temporarily removed some lines from sale on its website saying it had experienced 'unprecedented demand' for the range.
