The rooftop restaurant, housed on the 28 floor of the London Hilton hotel on Park Lane, will open at the end of the year.
It comes after Galvin at Windows closed its doors back in April after 18 years of trading amid a multi-million-pound renovation of the hotel.
Shanghai Me will boast 1930s Shanghai-inspired interiors by designer Richard Saunders and feature deep red velvet chairs and low lighting intended to create a ‘glamourous and romantic atmosphere’.
The menu is inspired by the culinary traditions of East Asia and will feature an extensive ‘library’ of dim sum; wagyu kushiyaki; and miso cod.
It marks the third major restaurant opening in the capital for Fundamental Hospitality in the last year following Gaia in Mayfair and La Maison Ani in Knightsbridge.

Shanghai Me currently operates sites in Dubai and Doha. The London opening will be complimented by the brand’s dedicated lounge concept, Bund.
It is one of two major restaurants set to launch at the London Hilton on Park Lane this year. The other is Netherlands-born steakhouse concept Mr Porter, which is set to open this September in the space that was once home to Trader Vic’s.
