Merlin Labron-Johnson’s Osip to relaunch in new location later this summer

Michelin-starred Somerset restaurant Osip will move into new digs just down the road from its current location in early August.

As reported by Restaurant last year, the move will be ‘a complete reimagining’ of Merlin Labron-Johnson’s original Osip and will further elevate the chef’s ‘field-to-plate philosophy’. 

Located about five minutes’ drive from Bruton in Hardway, the second iteration of Osip will feature a garden, living space and bedrooms.

Set within a newly-renovated 16th century inn, the new Osip will showcase a number of ‘exciting, emerging’ designers such as Andrew Pierce Scott and Tmpl Studio.

Architects Bindloss Dawes are also on board to design the space, which will have four letting bedroom above it.

The new iteration of Osip will have a bigger wine cellar and therefore a more extensive wine list, curated with a focus on organic, responsibly-grown wines from small-scale producers.

The new space will have a nursery garden on site and the location will be closer to Dreamers Farm, where the produce for the restaurant is cultivated.

Dishes will include herb broth served with crudités of farm vegetables and tempura potato, salted egg yolk and chives; Gnudi with peas, broad beans and smoked whey sauce; potato brioche brushed with lamb fat, whipped butter; and cured lamb heart. 

Awarded a Green star by Michelin last year in addition to its regular one, Osip is billed as restaurant that showcases the biodynamic produce that Labron-Johnson and the team have grown and harvested each day via a series of ‘simple and unpretentious courses’ that are guided by the seasons.

Originally from Devon, Labron-Johnson’s cooking CV includes Albert 1er in Chamonix, France, and In De Wulf in Belgium.

In 2015 he worked with restaurateurs William Lander and Daniel Morgenthau to open Portland on Great Portland Street in London, which won a Michelin star nine months after opening.

“Each visit to the new Osip will change—the light, the season, the time of day,” Labron-Johnson says. “We are very proud of what we built at Number One Bruton, and I am excited to expand on our relationships and knowledge to offer our guests the warmest hospitality and dining experience I can.”

The last service for Osip’s current location within the Number One Bruton hotel will be on 30 June. The new Osip will open at the beginning of August. Online bookings are now live.
