Mexican-inspired, quick-service restaurant Zambrero will opened a site at Birmingham’s Bullring & Grand Central as the Australian-born brand continues to expand across the UK.

Located on the Bullring’s middle level, the 580sq ft space will serve the brand’s ‘Feel Good Mex’ menu, with a focus on fusion flavours and modern superfood ingredients that it says gives a contemporary twist on Mexican favourites such as burritos, bowls, tacos and nachos.

It will the brand's second restaurant in the Midland city, joining its restaurant on Colmore Row.

Zambrero was founded in Canberra in 2005 by Scottish-born doctor Sam Prince and has now grown to become the biggest Mexican restaurant group in Australia, and eighth largest globally, with 250 sites in Australia, New Zealand, Britain, the Republic of Ireland and the US.

It entered the UK in 2021 with a site in London and now operates sites in the capital in Eastcheap, Kentish Town, Battersea, and Crouch End as well as venues in Chelmsford, Loughton, Manchester, Reading, and Twickenham.

In February last year the company received £143m in equity financing from Metric Capital Partners in order to further its expansion in Britain and Ireland.
