Aima Indigo to launch Mexico-inspired Camden cocktail bar

Former La Bodega Negra and Mestizo Chelsea employee Aima Indigo will launch a Mexico-inspired cocktail in Camden next month.

On Inverness Street, El Cenote will have a food menu overseen by former Mexcalito, Chingon Tacos and Ella Canta chef Daniel Sanchez. 

He will draw inspiration from traditional Mexican street food and recipes passed down from his grandmother, promising to deliver a menu that is ‘innovative and comforting’.

Dishes will include cochinita pipil tacos; taco birria; and carne asada norteña, a traditional Mexican dish composed of marinated skirt steak or flank steak that has been grilled and thinly sliced. 

There will also be a plant-based selection that includes sweet potato tacos, refried black beans with crispy sweet potato seasoned with spices, vegan halloumi cheese and chipotle mayonnaise; and crispy mushroom tacos, with vegan manchego cheese, mushroom stew with onion and spices and avocado tomatillo salsa.

Created by Indigo, the cocktail list will include the El Cenote (a twist on the Margarita, featuring cucumber and blue curaçao); Xocolatl (Tequila, chocolate liqueur and mole sauce); and La Guadalupe (a mango-based Margarita). 

“I am thrilled to bring the vibrancy and layers of beauty of my culture to Camden,” says Aima, who is originally from Veracruz in Eastern Mexico. 

“Our cocktails and food menu are inspired by the rich traditions and flavours of Mexico, promising an authentic and exciting culinary journey.”

El Cenote is part of The Rhumshack Group, the operator of a number of other restaurants and bars in London including four-strong Caribbean group Cottons.
