Called TT Restaurant and Rooftop, it will be headed up by ex-Oren head chef Sam Lone and have fire-cooked seasonal produce as its focus.
Food will be served across two floors in the newly-renovated rooftop and brand new ground floor restaurant.
Lone’s menu will feature smoking, pickling and baking across the sharing menu, which has been designed around a bespoke asado-style grill and wood fired oven - a nod to TT’s early days holding informal rooftop BBQs.
Twenty eight year-old Lone, whose CV includes time at The Palomar and Cabotte as well as at Two Lights and Dalston restaurant Oren, has created a menu that will include starters such as smoked ox cheek croquettes; house pickles; and focaccia with hummus followed by larger dishes that will include dry-aged ribeye with chimichurri; lamb shoulder a la plancha with roasted garlic yogurt; and barbecued mackerel with pickled chilli hot sauce allow ingredients to shine.
Other dishes will include char-grilled squid; oyster mushrooms with Burford Brown egg yolk; barbequed chicken thighs with tirokeftari, a spicy feta dip from Greece; fire-roasted golden beetroot with molasses; and roasted pumpkin with pumpkin seeds and creamy ricotta pesto.
There will also be a small selection of desserts that will include a pecan and whisky pie; whipped cheesecake with barbequed pineapple and white chocolate; and a warm chocolate brownie with creme fraiche.
TT Liquor launched in 2017 as a cocktail bar. TT Restaurant and Rooftop will open on 22 March.
