Six by Nico to launch new Glasgow flagship

Tasting menu restaurant Six by Nico is investing £3m to overhaul its Glasgow estate with the launch of two new concepts and a new flagship location in Merchant City.

Six by Nico Merchant City will launch in January and replace the group's Finnieston restaurant in the city, which will close and relaunch under a new concept in February called Sole Club.

Taking inspiration from 'The Chippie' menu that is always served at the launch of a new Six by Nico restaurant, Sole Club will feature a speakeasy-style fish restaurant with 22 covers, as well as an elevated fish and chip takeaway element. 

Alongside this, the group is also overhauling its restaurant on Byres Street in the city and launching a new cocktail tasting experience there called Somewhere by Nico. 

Similarly to the Six by Nico concept, which revolves around a six-course tasting menu that changes every six weeks and is themed around different places, memories and ideas, Somewhere by Nico will feature a new six stage cocktail experience that changes every six weeks and is inspired by a ‘themed world’.

“Our team is driven daily by the challenge to constantly create and reinvent,“ says Nico Simeone, who launched the first Six by Nico restaurant in Glasgow back in 2017.  

“We are dedicated to being different, never resting on our laurels, and continuously striving to create the best customer experiences. Marking our six-year journey with such a significant evolution of experiences in our home town and reaffirming our commitments to the city seems like the best way to celebrate the next stage in our company vision.“

Six by Nico is part of Sixco Limited and currently has 15 restaurant sites across the UK and Ireland.

Sixco also operates several offshoot brands including patisserie and café concept Valaria and charitable restaurant Beat 6, which are both based in Glasgow.

Earlier this year, Sixco announced plans to expand further across the UK and also launch its first international venture in Dubai following robust financial results.
