The announcement of the changes follows the news that Merlin Labron-Johnson’s Michelin-starred Osip restaurant - which is currently located in the hotel - will move to a larger, more rural location next year.
Launched by Aled Rees and Claudia Waddams in 2020, Number One Bruton is located in the upmarket town of Bruton and is billed as ‘a love letter to Somerset’ and ‘a showcase for the county’s craft heritage, artistry and culture’.
“Merlin and his exceptional team will always be close to our hearts; part of the Number One family and we wish them all the very best as they enter this new phase of their journey,” Rees says.
Details of the new F&B offer are yet to be announced but the hotel will ‘remain true to its roots’ offering an ‘abundant, cosy, joyful escape to the South West’ and ‘will continue to champion local suppliers, local heritage, local craftspeople and artists’.
“We are thrilled to now be in a position to start planning the improved version of our hotel, restaurant and bar and look forward to continuing to deliver the best in warmth and hospitality to our valued guests, friends and supporters,” Rees continues.
