Street food star Mexican Seoul goes permanent

Mexican-Korean fusion street food operator Mexican Seoul will open a taco bar this July close to Hackney’s Victoria Park.

Owned and operated by its founder Ashley Chipchase, the brand made its debut in Brick Lane Market in 2020 and now has a big presence on the UK’s festival scene following early success at Wing Fest. 

The 60-cover Bow Wharf site will offer Korean-style tacos including spicy pork belly topped with Korean slaw, lime crema, fried onions and homemade salsa verde; and chicken wings, including the Honey Buffanero and Gochu-Gang.

Supporting menu items will include elote-style corn ribs, topped with Pecorino cheese, miso and doenjang mayo and Korean chilli flakes; tuna tostadas with tuna, guacamole, topped with oi muchim and fried leeks. 

The drinks menu has been designed with help from East London Liquor company and will feature takes on classics with an offering that includes Kimchi Bloody Mary, Soju Martini and Sesame Old Fashioned, alongside Picantes, Margaritas and Mezcal Negronis.

Guests can also expect collaborations with local breweries kicking off with Pillars and Pretty Decent Beer Co. 

“If you told me two years ago that we would have picked up 15 awards for our food and be opening our own Taco Bar, I wouldn’t have believed it! The last couple of years have been a crazy journey, it has not always been easy but what’s made it worthwhile has been building a community of customers who love our food."
