Brighton & Hove Albion Football Club will launch The Tunnel Club at The Amex in time for the 2023/2024 season, which kicks off on 12 August.
The concept has been introduced by Russell Wood, head of commercial at Brighton & Hove Albion, and be targeted at club members, giving them the opportunity to dine in a one-way, 60-cover glass walled restaurant that looks out into the players’ tunnel.
Edwards's menu will focus on refined British dishes similar to those served at his flagship Etch restaurant in Hove with three options for starter, main and dessert available per sitting.
Dishes will include slow-cooked Trenchmore beef rump with poached and roasted salsify, salsify crisps and chicory jam; Marmite bread with seaweed butter; and Valrhona chocolate crémeux with coriander ice cream and burnt local honey.
“As a local chef, it’s been fantastic to see the rise of Brighton & Hove Albion in the past few seasons and I’m beyond excited to be involved in The Tunnel Club experience,” says Edwards, who also runs the Bingham Riverhouse restaurant in Richmond.
“It’s a privilege that the Club Members will be enjoying dishes that I’ve created and I look forward to heading down to the home matches as often as I can to cheer on the team.”
Etch launched in 2017 is currently ranked number 58 on the Estrella Damm National Restaurant Awards top 100 list.
