Macellaio RC founder Roberto Costa to launch ‘ultra seasonal’ Canary Wharf restaurant

Macellaio RC founder Roberto Costa will launch a restaurant in Canary Wharf this spring that puts ‘ultra seasonal’ British fish and game centre stage.

Fish Game will be headed by the steak-focused group’s executive chef Lello Favuzzi, whose cooking CV includes Mortimer House and L’Anima. 

Details about the restaurant's menu format or price point have yet to be released, but Fish Game is understood to be a more premium and ambitious proposition than Macellaio RC.

Ingredients will be cooked with ‘respect, restraint and skill’ over fire and charcoal. Fish Game will also feature a tequila bar, where aperitivo will be served daily. 

Unlike the exclusively Italian wine list at Macellaio RC, the list at Fish Game will include ‘some of the finest wines worldwide’ from both the Old and New World with a focus on small artisan producers.

Fish Game - which will trade from an as yet unknown location in Canary Wharf - has been designed by Roberto and Franco Costa, who is the founder and owner of Costa Group, a European furniture company.

Key features will include a charcoal grill, chandeliers, and octopus wood carvings, as well as a private room with a table for 12 people divided by a vintage cold storage door.

With sustainability being ‘a number one priority’, the space will be filled with vintage and reused furniture. 

“Fish and game, represent the most important elements for us, sea, and sky, brought together by fire in our brand-new concept. It will have a romantic atmosphere, with a high focus on sustainability, where the choice of wild animals goes according to the season, and everything is sourced carefully in the UK,” Costa says. 

“Quality has no boundaries, and as an Italian restaurateur who has always been working with Italian products since the beginning of my career, since I came to the UK, I fell in love with the land, and I want to bring to my guests table the best English products. Fish Game will be an English feast by an Italian waiter.”

Originally from Genoa in northwest Italy, Costa launched a number of steak restaurants in his home country before coming in London in 2012 to launch Macellaio RC in South Kensington. He now has six sites in London: Soho, South Kensington, Fitzrovia, Battersea and Union Street.
