The move comes after Four Corners, which was developed in collaboration between Hoxton owner Ennismore’s Carte Blanched concept group and 'pizza czar' Anthony Falco, ran a three month pop up at Rondo La Cave in late 2021/early 2022. The concept went on to establish its first permanent location within The Hoxton, Poblenou, in Barcelona in the spring of last year.
Rondo La Cave opened in October 2021 and was initially used by Ennismore as a kitchen incubator to test concepts including Four Corners and, more recently, Thai/American fusion concept Chet’s, which recently launched its own permanent restaurant at The Hoxton in Shepherd's Bush.
Four Corners's new menu will include a selection of deep-dish rectangular pizzas available to order by the slice or as a whole pie, alongside a short selection of snacks such as 'spicy' ranch salad; shrimp with lemon and wine cream sauce; and meatballs arabiatta.
Pizza toppings will include vodka meatball with cheddar, mozzarella, vodka Sauce, meatballs, basil oil, parmigiano and pecorino; beef and onion with smoked entrecote, mozzarella, roasted red onions, white onions, sumac, paprika and pomegranate molasses; and pistachio pesto and mortadella with mozzarella, pistachio and parmigiano.
There will also be a 'Red Top' pizza with cheddar, mozzarella, Sicilian oregano, pecorino and tomato.
Rondo La Cave's drinks list will continue to focus on low intervention wines available by the glass, bottle and magnum from the likes of GB Wineshippers, Modal, Basket Press, Modest Merchant, and Les Caves de Pyrene.
Four Corners will open at Rondo La Cave on Wednesday 25 January.
