Ewe Restaurant and Bar will be located in Westhoughton on Chorley Road, on the site of a former Indian Gate restaurant, and will serve ‘modern, British and globally inspired dishes’. Its name was inspired by its countryside location.
The restaurant will have space for 150 covers as well as a private dining room, garden room, open plan bar area and a baby grand piano. The venue is also set to open an outdoor terrace next year, with views overlooking Rivington Pike.
It will be run by operations manager Nathan Baxter, who has previously worked for Manchester restaurants Neighbourhood and Victors, and general manager Remi Khodr, who previously opened The Black Friar in Manchester.
The restaurant’s executive chef will be Maros Surovka, who was part of the opening team for Victors and whose CV also includes time at Counter House, East Coast Concepts, Neighbourhood and Australasia.
He has created a menu inspired by the four ‘elements’, earth – with dishes including shepherd's pie, and beef wellington – water (seafood), air (chicken and duck-based dishes) and fire (steaks from the grill). Options will also include a Sunday roast, pasta and pizza.
“We are so excited to be opening this unique dining experience in the heart of rural Bolton,” says Baxter. “We’re proud to be using quality, local suppliers and to be bringing something special to the community.”
