Fast casual ceviche-focused concept Crudo Cevicheria is to launch its first full-service restaurant later this month in London's Hackney, with further openings planned in the capital before the year's end.

Joining the group's sites on Old Street and in Fitzrovia, Crudo Hackney will feature an expanded menu that includes a new selection of hot dishes, alongside a greater variety of ceviche and a South American-inspired cocktail menu.

Crudo founders Maria Yanez and Carlos Socorro describe the new Hackney restaurant as 'an evolution' of the brand, which started out as a fast casual build-your-own ceviche bowl restaurant in 2019.

The food menu will begin with small plates and snacks including avocado and beetroot tartare; and pastel de choclo, a savoury Peruvian corn cake with feta and fresh pico de gallo sauce. 

Ceviche will remain a centrepiece, with a sea bass option marinated with lime, ginger and chilli; tuna with soy, sesame and yuzu; and king prawn with jalapeno, cucumber and coriander.

Other dishes include a range of tiraditos - a Peruvian fish dish similar to sashimi - with options such as octopus with Peruvian criolla sauce and La Vera Valley smoked paprika; and new larger plates like 36-hour short ribs cooked in brown beer, aji amarillo and aji panca; and whole fish cooked over coals with aji verde, a sauce of coriander, jalapenos and lime.

The new cocktail menu will include new pisco, mezcal and tequila serves, as well as cocktails such as the Chilcano, ABA pisco with ginger ale, ginger and angostura bitters; the Manzanita with Disaronno Amaretto, cider, lime and apple; and Cola de mono featuring Hejlo coffee liqueur, ABA pisco, fresh coffee and cinnamon.
