Jackson Boxer is doing a short residency for his Lumette restaurant on London’s The Strand ahead of its bricks and mortar launch next year.

The Orasay and Brunswick House chef will be in residency at 180 Corner at 180 Strand cooking a set-menu with the title, ‘Lumette’ from Tuesday 15 to Friday 18 November. He will be joined at the stoves by Max Osborne, former head chef of Michelin-starred Restaurant Studio in Copenhagen.

Lumette, a contraction of ‘allumette’ or ‘matchstick’ that alludes to live fire cooking as well as warmth, hospitality and candlelight, is a project that Boxer has been working on for the best part of this year, with a view to opening a new restaurant in 2023.

The 40-cover residency will serve a menu of dishes likely to be served at the permanent restaurant, including oyster, frozen hot and sour broth; bone marrow, cream and caviar; foie gras, Brixham crab and Madagascan pepper; beefshin cannelloni, saffron and pecorino; dry-aged duck, baked swede, spiced fig, duck neck & truffle sauce; smoked bacon and duck leg potato gratin; and apple, hazelnut, brown butter ice cream.

180 Corner is a pizzeria by day and a residency space by night. Part of the 180 Food programme, it hosts guest chefs, talks and workshops alongside all the other restaurants in the building, including Ikoyi, which is relocating from St James’, Toklas, Akira Sushi and 180 Pasta.
