The move sees the former head chef at Robinson’s The Woodsman in Hotel Indigo in Stratford Upon Avon re-join Castlebridge Hospitality.
The Elder was launched by Robinson, who is also co-owner of the Michelin-starred The Harwood Arms pub in London, in 2021 within Hotel Indigo Bath alongside hotel management company Castlebridge Hospitality
Coats, who was previously head chef at Dickie Fitz in London, joined The Woodsman in 2018 when it launched, and which won Best New Entry UK in the Waitrose Good Food Guide 2020. Before that he was interim sous chef at Launceston Place, and he has also worked at The Greenhouse in London under Bjorn Van de Horst whom he followed to La Noisette.
He will continue The Elder’s focus on seasonal, wild, and locally sourced ingredients with new dishes to feature on the restaurant’s menu to includes slow cooked Berkshire hare ragout with soft polenta, green sauce, and 36-month aged parmesan; and roast Gressingham duck with swede, chicory and pickled blackberries.
