Located on Bath Road in the Gloucestershire town, the kitchen will be headed up by Jeff Lewis, who has spent time in professional kitchens including at Heston Blumenthal’s The Fat Duck and training at Gareth Ward’s Ynyshir restaurant with rooms in Wales.
Restaurant Journey will serve a 12-course tasting menu that draws on Lewis’ extensive travels around the world and his time working in restaurant kitchens across Asia.
Dishes on the launch menu will include wasabi and nori popcorn; Singapore crab tartlet; sourdough with beef tea and wagyu marrow butter; beetroot mille feuille with aged soy beurre blanc; black cod with bok choi, dashi, and aubergine caviar; five-hour braised beef cheek with nahm jim, carrot, and galangal puree; and pork rib char sui and fermented pineapple.
Desserts will feature dishes such as dark chocolate and tofu.
“We want the food to be centre stage, to delight and surprise the diner, and to offer Cheltenham a fine dining experience like no other,” says Lewis.
“A three-hour experience with good music, some kitchen theatrics, a seamless serving performance, and the chance for guests to relax and enjoy.”
Restaurant Journey will open on 28 October.
