Pip Lacey and Gordy McIntyre to open Islington pub Hicce Hart

Chef Pip Lacey and business partner Gordy McIntyre are to open a pub in Islington next month.

Called Hicce Hart, the pub will continue the pair’s ethos at their Coals Drop Yard restaurant serving British-style food alongside a range of craft beer from an independent local brewer and biodynamic and sustainable wines.

Lacey’s menu will come in the form of a selection of small plate-style bar snacks alongside a full dining menu of sharing starters, mains and desserts.There will also be a Sunday roast option.

The kitchen will be led by Charlotte Harris, who previously worked at Hicce before moving on to a number of London restaurants including Fallow. Agustina Basilico will manage the floor having worked with Lacey and McIntyre from the beginning. 

“I’m so excited for us to open our second place. And, to do it with existing ambitious members of the Hicce family, is the dream come true. I can’t wait for them to flourish and see the Hicce Hart become the heart and soul of the local community,” says Lacey.

The pub will work solely with north London independent brewer The Goodness Brewery, stocking its range of beers alongside a signature co-brew Hicce IPA. It will also offer an ‘adventurous’ wine list that will change weekly depending on availability, led by small batch producers with minimal intervention. 

“I personally have a massive love for the pub world; its culture, history, its standing within the community,” says McIntyre.

“Having spent so much of my working life in and around pubs I owe them for a vast majority of the people I hold dear. The pub is one of the few real levellers in life: it showcases the beauty of multicultural London at its finest.

“To have the privilege to become custodians of such a historical site is a real honour.”

The duo opened Hicce at Coals Drop Yard in 2018. Lacey also lead the kitchen at the restaurant at Jeremy Clarkson's currently closed farm restaurant Diddly Squat.
