The 6,329 sq ft venue will be located in West India Quay and will 'bring' a slice of the British countryside to East London.
Like Clays debut site in Moorgate - which launched last year - the new site will emulate clay target shooting, with players able to book 90-minute experiences for up to 20 people.
Players can choose from a collection of five interactive games to play within their dedicated, semi-private ‘peg’.
Clays will be home to 8 ‘pegs’ in total, a bar area, private room, heated outdoor drinking and dining space and a treehouse-style DJ booth.
The food and drink offer at Clays is billed as premium, with the menu overseen by former The Dorchester, The Ritz and Pied à Terre chef Roger Olsson.
Dishes include sweetcorn ribs with paprika salt and a lemon and chilli dip; Cobble Lane charcuterie; 'KFC' tempura cauliflower; and loaded breads.
Created by Jon Calabrese, Clays cocktail list draws inspiration from the world of clay shooting with flavours reminiscent of the British countryside.
Options include sweet and sour pink gin creation the Clay Burst and banana and spiced rum-based drink Precision Punch. All the cocktails served at Clays are clarified to create a crystal-clear liquid with 'an unbelievably smooth texture and taste'.
