The chef will talk about how his remote restaurant with rooms came to scoop the number one spot at this year’s National Restaurant Awards as well as this year being awarded two Michelin stars in conversation with Restaurant Magazine editor Stefan Chomka.
He will share his journey from self-described “drop-out” to acclaimed chef and discuss how he marries Japanese techniques with Welsh ingredients. He will also discuss his approach to running a restaurant where loud music and multiple small courses create a singular dining experience and why it has made such an impact.
The fireside chat is being held on the first day of the three-day exhibition, which is running at Olympia in London on 26-28 September.
The Big Hospitality Expo, sponsored by Uber Eats, is the must-attend event for restaurateurs and chefs, casual dining operators as well as pub and bar operators.
