Largely Brighton-based coffee shop and restaurant group Wolfox has taken on the ground floor of The Office in Circus Street for a sustainability-focused Japanese restaurant concept.

Expected to open later this year, FUMI will offer coffee, brunch and sushi and bento boxes by day before transforming into a fine dining restaurant in the evening.

The launch follows the success of Wolfox plant-based Japanese restaurant Kusaki on New England Road and will be led by the same Japanese-born chef.

“Despite the popularity of Japanese cuisine, there is not currently a fine dining experience on offer in the city and we are creating a place for people to enjoy special occasions and smart dinners, inspired by nature and seasonality, which will be a real treat for Japanese food lovers,” says Wolfox CEO Fabio Lauro.

The space will start being fitted out next month with the team focusing on using sustainable products in line with their food and drink ethos, which includes using local, seasonal ingredients where possible, including Wolfox’s own locally-brewed beer.

Wolfox has become a major player within Brighton & Hove’s food and drink scene in recent years operating a hotel and various restaurants and cafés.

In addition it now operates sites in nearby Haywards Heath as well as Leeds.

Circus Street and its architects shedkm have recently won two major architectural awards for the scheme’s  design including one from the Sussex Heritage Trust.

Located close to Old Steine in central Brighton, the scheme was conceived by developer U+I to provide 'state of the art, flexible space with energy efficiency and the very best digital connectivity at its core'.
