Walsh, who launched The Betterment restaurant (now closed) at the Grosvenor Square hotel with Atherton in summer 2019, will oversee the food at Café Biltmore and The Tea Lounge as executive chef.
Current menu items at Café Biltmore include a buttermilk fried chicken sandwich; roasted cod, green Thai and mussel curry; and tomato risotto as well as arrange of steaks.
Walsh has worked with Atherton at his The Social Company for more than a decade and has also worked in kitchens including Restaurant Gordon Ramsay.
“I’m excited to be taking over from Jason fully at one of Mayfair’s prime hotels working with the team at The Biltmore and hope to carry on delivering signature dishes for both our international and London guests to enjoy as well as developing new menus to put my stamp on this new chapter,” says Walsh.
The hotel has confirmed it has parted ways ‘amicably’ with Atherton following their three-year partnership.
Atherton and Walsh launched the Betterment restaurant when the re-branded The Biltmore opened in 2019, but the restaurant did not reopen after the Covid enforced lockdowns.
