Simon Rimmer to open second Greens in Manchester

Simon Rimmer and business partner Simon Connolly are opening a second of their Greens restaurant this month as part of ambitious plans to grow their vegetarian restaurant business.

The new restaurant will be located in the Stanley Square Development in Sale, Manchester, and will seat more than 100 covers both inside and on its outside terrace.

In addition, there will be a panoramic roof terrace featuring an outside bar and gin shack serving drinks and smaller plates.

The vegetarian menu will comprise innovative vegetarian dishes using the best of local produce with classic Greens dishes such as its truffled mushroom wellington also featuring.

The new restaurant will have sustainability at its core with the building design, construction, the creation of the menu, energy usage and waste management designed to be as environmentally friendly as possible.

The new restaurant joins the original Greens in West Didsbury, Manchester, which opened by Sunday Brunch chef Rimmer and Connolly in 1990.

“Although Greens has been an institution with the local Manchester vegetarian community for over 30 years, the general population has woken up to the fact that livestock farming and fishing practices are becoming increasingly unsustainable,” says Rimmer.

“The result is a higher demand for premium quality and flavoursome vegetarian food across all generations. We believe Greens is well placed to service this increased demand by providing a menu that caters for both committed vegetarians and vegans or those just wanting to try meat or fish free high quality, great tasting food.

“I am personally very excited with the start of our expansion journey at this destination location in Stanley Square and we welcome everyone to come and try our unique vegetarian experience.”

The new opening is likely to be followed by further Greens restaurants, with the pair saying they have ambitious plans to expand with new sites across the northwest of England.
