Artist and restaurateur Jonny Gent, architect Russell Potter (SODA) and chef Florence Knight will open Boath House, located near the rural town of Nairn, in May.
The remote sanctuary, housed within a Grade A listed Georgian mansion, will include bedrooms and two restaurants, with the extensive grounds also featuring a walled garden and cabins.
Described as a 'unique new project from the trio', Boath House will 'mirror the practice and ethos' of Sessions Arts Club, which launched in Clerkenwell last year and features a restaurant, wine bar and art gallery.
Gent and Potter will oversee the 'transformation' of the mansion, with Knight designing the menus for the restaurants.
While details on the food are limited, it is expected that Knight will continue to champion refined, seasonally-led dishes inspired by British, French and Italian cooking.
Dishes to feature on the menu at Sessions Arts Club include grilled friggitelli with sea salt; sea bream, fig leaf and sorrel; potato and chard croquettes with lemon aioli; lamb sweetbreads with lettuce and lovage; and ricotta and cherry tart.
Art and expression will be integral to Boath, with a handpicked selection of multi-disciplinary artists, writers, chefs and musicians invited to take up residence in the house and grounds.
Florence Knight was recently shortlisted for Chef of the Year at this year's Estrella Damm National Restaurant Awards, while Sessions Arts Club has been nominated for Opening of the Year.
