Cooper joined The Lanesborough London last summer from Julie’s Restaurant in Notting Hill having attracted Michelin stars at both The Bingham and The Goring.
The Lanesborough Grill is located in the hotel’s ‘richly decorated’ main dining room, which is naturally illuminated during the day by a domed glass roof and by chandeliers in the evening.
Billed as seasonal modern British, the a la carte menu will ‘champion regional artisans and the very best of seasonal produce from around the country’. A set menu will also be available. A number of dishes will be served table side on gueridon trolleys.
Launch dishes include Coronation crab salad with curry leaf sabayon; Jerusalem artichoke Hereford beef tartare with potato crisps, cured egg yolk, truffle, and sherry dressing; roast turbot on the bone with potted shrimp Bearnaise; and Yorkshire rhubarb trifle with Earl Grey custard and millionaire shortbread.
“Our vision is to take the combination of tradition and innovation to create a compelling contemporary offering, using the very best of British produce to deliver unforgettable dining experiences in one of London’s most beautiful and atmospheric Regency dining rooms," Cooper says.
"It’s important that our guests enjoy more than just great food and drink – we want to infuse fun and creative elements and, of course, a sense of high glamour.”
He adds: “London is one of the world’s most established and diverse restaurant markets and it is a very exciting time to be launching a new restaurant concept.”
