After more than two years of pop ups and residencies, owners Sarah Brading and Rich Baker will open a restaurant in London’s Bethnal Green on the edge of Broadway Market.
Located on Cambridge Heath Road on the site of their first pop-up, the restaurant will have space for 35 covers inside and an additional 16 outside and will serve a menu of vegetarian and vegan pizzas.
Items on the all-day menu will feature Climpson & Sons’ coffee, kimchi shakshuka, granola and fruit compote with pizzas served all day and seasonal small plates available in the evening.
Pizzas are made with heritage grains and include The OG ‘Hackney Hot’, made with sweet pickled beets, Somerset three-cheese grate, organic tomato passata, and chillies; one with buffalo mozzarella, broad beans and wild garlic; and one with creamy garlic mushrooms, oat bechamel, and toasted walnuts. All pizzas can be made vegan by swapping to vegan cheese.
“After a couple of years on the pop-up scene, we are so excited to be opening our first restaurant. We’ve pulled together the best suppliers in London to create an ethically sourced, mouth-watering menu that will run morning - night, six days a week,” says Brading.
“This is an evolution of our brand - we are more than just pizzas. Our spot on the corner of Cambridge Heath Road and Vyner Street fizzes with creativity and community - we can’t wait to get stuck in.”
Wine will be available on tap in white, red and orange varieties, and in reusable bottles from Sustainable Wine Solutions. The restaurant will also have a bottle shop that offers a ‘bottle return’ scheme where diners can pick up a reusable bottle to take home; all available on the drink-in menu too, with a corkage fee
Flat Earth has a zero to landfill policy, with any small amount of unavoidable food waste being turned into fertiliser for local farms. It ensures the whole of the vegetable or plant is used, turning the roots and stems into stock and wonky vegetables into crust dippers.
