Pappy’s Texas Barbeque to open Pappy’s Taco Bar this spring

Cumbrian-based barbecue restaurant group Pappy’s Texas Barbeque is opening a taco restaurant this spring.

Pappy’s Taco Bar will be launched by Pappy’s Texas Barbeque founder Robin Perris. Peris, a third-generation Texan pitmaster from the BBQ-belt town of Taylor, close to the border with Mexico, currently operates Pappy’s Smokehouse Bar & Grill, Pappy’s Texan Takeout and Pappy’s at Home meal kits.

The group says the new taco bar will aim to redefine the typical perception of Tex-Mex cooking serving sharing-style dishes featuring Texas barbequed meat from its own smokehouse in traditional soft corn tortillas.

Signature taco will include carnitas, made with slow-cooked smoked pork in spices and juices, topped with pico de gallo and lime wedges; oak smoked brisket tacos with red cabbage slaw, and salsa verde; and a traditional Mexican birria taco made with slow-cooked USDA Black Angus brisket in a stew served with beef consomme for dipping.

Alongside tacos, the menu will serve totapas, a seven-layer Tex-Mex dip, fresh seasonal salsas and desserts such as churros and a Mexican affogato. 

The drinks menu will celebrate Mexican spirits with a selection of rare tequilas and mezcals such as Vivir Tequila Anjo, Patron Reposada and Mezcal La Ledida-Tobala.

“Tex-Mex food can often be perceived as low-quality fast food. We want to try and redefine that perception by using high-quality, authentic ingredients and bringing the best elements of both cuisines together,” says Perris.

“The result will be delicious and uplifting, challenging our diners’ thinking (for the better!) about the fusion of Texan and Mexican cooking. 

Taco Bar is the natural next step for us and a very exciting chapter for the Pappy’s family. It has always been my dream to have my own permanent restaurant serving my beloved Texas barbeque so I can’t wait to welcome diners through the door come spring.”

Perris founded Pappy’s Texas Barbeque, inspired by her father’s Texas barbeque business back home, as a trailer turned smoker in 2013, having lived in Cumbria for 16 years. She later opened Pappy’s Smokehouse Bar & Grill in Kendal, which reopens it outdoor dining area from the end of this month.
