Silverleaf cocktail bar to open in Pan Pacific London hotel next month

Three top London bartenders are behind the opening of a new cocktail bar in the recently launched Pan Pacific London hotel next month

The bar, called Silverleaf, is the brainchild of Martyn ‘Simo’ Simpson, owner of Milroy’s of Soho, his former director of bars Chris Tanner, and former bar manager at Shoreditch’s Callooh Callay Liam Broom.

Tanner will be the bar’s general manager and Broom will be its bar manager, with Simpson helping curate the bar’s menu and drinks selection

Silverleaf is described as being inspired by ‘naturalism and the elements’ and will be located in the 144-year-old Devonshire House, a separate building adjacent to the hotel in the middle of Pan Pacific London’s estate.

It will feature a large marble bar and include a semi-private area and Alba; a separate space that accommodates up to 12 people and which is designed for private drink experiences as well as being home to a bottle-keep for customers.

Pan Pacific London has collaborated with Tom Dixon’s Design Research Studio to create bespoke lighting, furniture and accessories. Décor features will include blackened hot rolled steel, marble, charred timber and salt-glazed hand-made British bricks.

Guests will be greeted by an animated, polished stainless steel light sculpture and there will also be a temperature-controlled gold display cabinet that will house high-value bottles of spirits.

There will also be a timber table, bespoke tables carved from solid marble blocks as well as the whisky nosing glasses from Tom Dixon’s PUCK range, which were developed especially for Silverleaf.

Each cocktail on the drinks menu will champion two or three core ingredients, including unusual options and ones that have been foraged. Drinks are said to have ‘minimalist presentation’ with a touch of colour along with edible garnishes.

Pan Pacific London is a 237-bedroom hotel  located within the One Bishopsgate Plaza building in the City. It is home to Singaporean all-day dining restaurant Straits Kitchen, headed up by executive chef Lorraine Sinclair and Singaporean group executive chef Tony Khoo; afternoon tea venue Orchid Lounge and bar Ginger Lilly. Cherish Finden is the hotel's executive pastry chef.
