Ben Tish appointed chef director at Cubitt House

Ben Tish has been named chef director at London-based pub and hotel group Cubitt House as part of a number of new appointments at the business.

Tish, who last month stepped down from his position as culinary director of The Stafford London and Fitzrovia restaurant Norma, will oversee the food at the group’s six venues, which include The Beau Brummell, The Grazing Goat, and The Thomas Cubitt. He will be part of a new team that will also include Seb Fogg as newly appointed managing director and Laura Montana as openings director while Sam and Georgie Pearman have joined as directors and co-chairs.

The team will oversee the refurbishment of Cubitt House’s sites as well as a series of acquisitions, including The Princess Royal in Notting Hill in Spring 2022 and The Barley Mow in Mayfair in the summer, and th subsequent renovation of some of London’s most prominent public houses.

The first venue to be refurbished will be The Coach Makers Arms in Marylebone. The pub will continue operating as a traditional pub on the ground floor with a 60-cover classical British restaurant on the first floor, offering a chophouse-style menu. On the lower ground floor will be a 50-cover cocktail bar.

Two more refurbishment projects are planned for next year – for The Alfred Tennyson in Belgravia, The Orange in Pimlico.

Tish will create individual menus at each venue, with some taking inspiration from his Mediterranean background and others serving more classic chophouse and pub fare. He will oversee menu development at each venue and will work alongside Richard Sandiford, previously of Hawksmoor and The Double Red Duke, who will specifically focus his attention on new openings within the group.

Sam and Georgie Pearman, owners of Cotswold-based boutique hotel and restaurant group Country Creatures, will focus on the operational side of the business and the redevelopment of the existing portfolio and the new sites respectively.

Montana Fogg founders Seb Fogg and Laura Montana have been involved in restaurant openings including Sexy Fish, Monkey Bar New York, 34 Restaurant, Soho House West Hollywood, The Delaunay and Isabel Mayfair.
