Supa Ya Ramen finally set to open first permanent restaurant next month

Ramen supper club Supa Ya Ramen will finally open its first permanent restaurant next week on Kingsland Road in Dalston.

Founder and head chef Luke Findlay was originally set to launch Supa Ya Ramen's first bricks and mortar restaurant on Hackney Road in March last year, but the plans fell through as a result of the pandemic. 

Now, though, he will launch an 'intimate' 20-seat ramen bar that'll be open between Wednesday and Sunday every week and serve a menu of 'traditionally inauthentic' ramen.

This will include a set line-up of Supa Ya Ramen classics, as well as a rotating special. There will also be a new selection of small plates and side dishes, and a pudding.

The ramen menu will include a prawn head, miso and ibérico pork fat soup, served ice cold, with seared prawns marinated in red pepper oil and crab meat dressed with yuzu kosho, sesame and lime; and a buttered toast-flavour broth with slow-roast tomato, smoked pork belly bacon and soft egg.

Small plates will include house pickles; roast chicken skin with fermented chilli and onion mayo; and cold fennel and hot pepper sausage with pickled mayo. Dessert will be a noodle ice cream with miso caramel.

The restaurant will operate for now as 'bring you own bottle' with a small corkage fee, but will soon have a curated drinks menu to be served alongside the food. 

Supa Ya Ramen started out life as a weekly ramen supper club hosted in Findlay’s own kitchen. It has also held events at London’s Mortimer House and Snackbar.
