Rudy’s doubles up in Liverpool

Neapolitan pizza brand Rudy's will open its second Liverpool site in late September, having taken over the former Sainsbury’s building on Bold Street.

It will be the ninth UK location for the Manchester-founded group, which is backed by the Mission Mars hospitality group.

Rudy’s Bold Street will occupy a 3000sq ft space and hold 120 covers.

To mark the launch, the restaurant will be offering 2,500 free pizzas based on a first come first served basis.

Rudy's has won a number of plaudits, including recently being named in the 20 best pizzerias in the world by Big Seven and becoming the ‘No.1 Pizzeria in the UK’ on TripAdvisor.

The dough is made fresh daily using Caputo ‘00’ flour that has been left to ferment for at least 24 hours, and is cooked in wood fire ovens for 60 seconds, in accordance with Neapolitan pizza tradition, leaving it soft and floppy with a leopard-patterned crust.

Pizzas are priced between £4.90 and £8.90 and include options such as 'calebrese' with tomato, fior di latte mozzarella, basil and n’duja sausage; the 'tarantina' with tomato, fior di latte, anchovies, capers, Kalamata olives, oregano, basil and olive oil; and the 'salsiccia del nonno' white pizza with chilli flakes, fior di latte, smoked mozzarella, ground fennel sausage, caramelised red onion, parmesan, basil and olive oil.

Rudy's was founded in 2015 by Jim Morgan and his partner Kate Wilson, and launched its first in Ancoats, Manchester.

The group has primarily focused its expansion efforts in the north of England, but earlier this summer made its debut in London having acquired the former Wahaca site on Soho’s Wardour Street.
